4 prepared trout Salt Freshly ground black pepper 2 cloves of garlic 1 large fennel bulb 2 Tbs. fresh tarragon 2 untreated lemons Oil
1. Wash the trout and pat dry. Season with salt inside and out.
2. Peel the cloves of garlic and chop finely. Clean and wash the fennel. Grate finely and mix with the finely chopped tarragon and garlic. Place inside the trout and secure with cocktail sticks.
3. Brush the outside of the trout with oil. Put the fish on the open, oiled fish grilling basket. Wash the lemons. Cut the lemons into thin slices and arrange on one side of the fish. Turn the trout over and arrange the lemons on the other side as well.
4. Close the fish basket and grill the fish for about 15-20 minutes. Brush with oil throughout the cooking process and turn from time to time.
