1/4 cup packed dark brown sugar 1 tablespoon cornstarch or arrowroot 2/3 cup apple juice 1/4 cup cider vinegar 1 teaspoon grated orange, lemon, or lime zest
1. In a saucepan, stir together the sugar and cornstarch until incorporated, then stir in the apple juice and vinegar. Bring to boil, stirring constantly, until the sugar is dissolved.
2. Reduce to a simmer, add the citrus zest, and cook, stirring, until thickened.
3. Remove from the heat and use to brush on poultry, beef, pork, lamb, and sausage.
