Tuna-Cantaloupe Salads

Description: Everyone loves a good salad and you can enjoy this at lunch or for a baby or bridal shower. This also makes a great Mother's Day lunch!

Ingredients:
1 package (6-oz.) frozen chinese pea pods
3 cups cooked rice
2 cans (6 1/2-ozs. each)tuna, drained
1/3 cup mayonnaise or salad dressing
1 teaspoon instant chicken bouillon
1/4 teaspoon ground ginger
3 small cantaloupes
1/3 cup cashews or salted peanuts,
coarsely chopped
Preparation:
1. Rinse frozen pea pods under running cold water to separate; drain. Mix pea pods, rice, tuna, mayonnaise, instant bouillon and ginger.

2. Cover and refrigerate at least 2 hours.

3. Cut cantaloupes crosswise into halves, using zigzag or scalloped cut; scoop out seeds. Cut thin layer from bottom of each half to prevent tipping if necessary.

4. Spoon 1 cup of rice mixture into each half; sprinkle with cashews.
