5 medium sweet potatoes, cooked 1/2 cup butter, melted 2 cups sugar 1 cup milk 2 eggs 1/2 teaspoon ground nutmeg 1/2 teaspoon vanilla extract 2 9-inch pastry shells, unbaked
1. Mash the potatoes; add butter and sugar. Blend.
2. Stir in milk, eggs, nutmeg, and vanilla, then beat with mixer for about 5 minutes.
3. Pour into 2 pastry shells.
4. Bake at 350F degrees for 25 minutes.
