1 1/2 cups snipped fresh basil leaves 2 medium cloves garlic, peeled and crushed 2 Tbs. pine nuts 1/2 cup extra virgin olive oil 1/2 cup freshly grated Parmesan cheese Salt and pepper, to taste
1. In a food processor (a blender is not recommended) combine the basil, garlic, and pine nuts and process on high, drizzling in the oil throughout.
2. When the mixture is creamy, transfer to a bowl and fold in the cheese and salt and pepper.
3. If freezing, omit the cheese and add it just before serving.
