1 1/4 cups all-purpose flour 1 1/2 tsps. baking powder 1/4 tsp. baking soda 1 Tbs. sugar 3 Tbs. reduced-calorie stick margarine 1/3 cup 1%low-fat cottage cheese 1/4 cup frozen egg substitute, thawed 3 Tbs. low-sugar orange marmalade 3/4 tsp. grated orange rind Vegetable cooking spray
1. Combine first 4 ingredients; cut in margarine with pastry blender until mixture resembles coarse meal.
2. Combine cottage cheese, egg substitute, orange marmalade, and orange rind; add to flour mixture, stirring just until dry ingredients ae moistened.
3. Drop dough by tablespoonfuls onto a baking sheet coated with cooking spray.
4. Bake at 400-degrees for 8 minutes or until golden brown.
