Description: For a little Irish luck, try this stew of lamb and potatoes.

Ingredients:
4 lbs. neck of lamb, sliced
3 large onions
3 lbs. potatoes
salt and pepper to taste
chopped parsley
Preparation:
1. Preheat oven to 325-degrees.

2. Trim all fat from lamb slices. Peel onions; slice thin. Peel potatoes; slice 1/4-inch thick.

3. Place a layer of onions in large heavy casserole. Cover with a layer of lamb; season with salt and pepper. Add a layer of potatoes. Repeat layers until all ingredients are used, ending with a layer of potatoes. Pour in enough water to fill the casserole 3/4 full.

4. Place casserole over high heat; bring to a boil. Cover; transfer to oven.

5.Bake for 1 hour. Let cool, then skim off any fat.

6. Reheat for 30 minutes; sprinkle with parsley before serving.
