Ingredients:
Roe from 1 or 2 lobsters
1/4 lb. (1 stick) unsalted butter, softened
Kosher salt
Preparation:
1. Place the roe, butter, and a pinch of salt in a food processor or blender and puree until the mixture is smooth.

2. Lay a square of plastic wrap, about 5x5-inches, on a clean surface.

3. Spoon the lobster butter onto the plastic. Mold the butter into a cylinder as you wrap it tightly.

4. Chill before using.

5. Lobster butter can be kept in the refrigerator for 1 to 2 days or for up to a month in the freezer.
