Layered Vegetable Salad

Description: This overnight salad looks great in a clear bowl!

Ingredients:
1 head iceberg lettuce, torn into pieces
1/2 cup chopped purple or white onion (or 1 onion, sliced
and separated into rings)
1 cup chopped green bell pepper
3/4 cup chopped celery
1 10-oz package frozen green peas, thawed (or 1 can green
peas, drained)
1 small jar chopped pimiento
1 tablespoon sugar
6 slices bacon, cooked, drained, and crumbled
2 boiled eggs, chopped or sliced
1 cup grated cheese (cheddar or mozzarella)
Parmesan cheese to taste
salt and pepper (or other seasonings) to taste
Dressing:
1 cup mayonnaise
1 package dry Ranch dressing
Preparation:
1. In large bowl, layer ingredients in the order listed.
Use seasonings as you go, or omit seasonings until
serving.

2. Mix dressing ingredients; seal top of salad with
dressing. Cover and refrigerate overnight.

3. Before serving, top with bacon, eggs, and cheese.

NOTE: Use lowfat cheese, lowfat dressing ingredients, and imitation bacon bits for a healthier alternative.
