8 medium tomatoes 8 tablespoon dry red wine salt freshly ground black pepper salad leaves or parsley as garnish
1. Put each tomato on a piece of foil. Press the foil all round the tomato, leaving just a small opening at the top but not allowing juices to escape, at the bottom.
2. Pour 1 tablespoon of red wine over each tomato. Season with salt and pepper.
3. Grill the tomatoes over medium heat (at the edge of the grid) for 10 to 15 minutes.
4. Remove the foil carefully, reserving the wine and tomato juice. Arrange the tomatoes on a plate. Pour the wine sauce over the tomatoes. Wash the salad leaves or parsley, chop and garnish the tomatoes.
The tomatoes used in this recipe should be very firm and not too small.
