Curried Rice with Shallots

Yields: 4 to 6 servings
Prep Time:
Description: A new twist with rice.

Ingredients:
2 Tbs. butter or margarine
2 shallots, peeled and sliced into 1/4-inch pieces
1/2 tsp. curry powder
Pinch ground nutmeg or mace
2 cups cooked brown rice, hot
1/2 cup half-and-half or rice milk
Salt and pepper, to taste
Preparation:
1. Melt the butter in a saucepan and saute' the shallots until translucent.

2. Add the curry and nutmeg, then stir in the rice, half-and-half, and salt and pepper to taste.

3. Heat through and serve immediately.
