Chicken Vermicelli

Ingredients:
Vegetable cooking spray
1 lb. freshly ground uncooked chicken thighs
2 cups sliced fresh mushrooms
1 cup chopped onion
1 tsp. dried Italian seasoning
1 tsp. coarsely ground pepper
1/4 tsp. garlic powder
1 (25 1/2-oz.) jar commercial nonfat chunky
Italian-style vegetable pasta sauce
5 cups cooked vermicelli (cooked without salt or
or fat)
Preparation:
1. Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot. Add chicken, mushrooms, and onions; cook until chicken is browned, stirring until it crumbles. Drain well, and wipe drippings from skillet with a paper towel.

2. Return chicken mixture to skillet; stir in Italian seasoning and next 3 ingredients. Cover and cook over medium heat 8 minutes or until thoroughly heated.

3. Serve 1 cup chicken mixture over 1 cup vermicelli.
