Good to serve a group of friends anytime
1 chicken fryer (5-7 lbs.) 1/2 gallon water 1 pound hot pork sausage 1 large onion 3 cups raw rice 6 cups chicken broth salt and pepper, to taste
1. Cut up chicken into pieces; add salt and pepper to taste. Boil until tender in 1/2 gallon of water.
2. Remove skin and bones. Save broth.
3. Brown pork sausage and onion. Pour off grease.
4. Mix rice, chicken broth, chicken, sausage, salt, and pepper in heavy pot. Bring to boil and boil vigorously about 3 minutes.
5. Turn heat down and simmer 30 minutes to 1 hour.
