1 1/2 cups milk 1 cup coarse bread crumbs 1 tablespoon butter or margarine 1/2 pound (2 cups) grated cheddar cheese 4 eggs, separated salt and pepper, to taste
1. Preheat oven to 350-degrees.
2. Grease 2 1/2-quart souffle dish or casserole dish with margarine.
3. Heat milk, bread crumbs, and butter in top of double boiler. Add cheese to hot mixture and stir until melted. Beat egg yolks until light and creamy. Gradually add cheese mixture to egg yolks, stirring constantly. Season with salt and pepper.
4. Beat egg whites until stiff peaks form. Fold cheese mixture into egg whites.
5. Pour mixture into prepared dish.
6. Bake for 30 to 35 minutes, or until just set.
