Vegetable cooking spray 1 tsp. reduced-calorie margarine 2/3 cup chopped onion 1/2 cup chopped celery 1/2 cup chopped green pepper 1 (16-oz.) pkg. frozen lima beans 1 cup seeded, diced tomato 1 cup spicy-hot vegetable juice cocktail
1. Coat a large nonstick skillet with cooking spray; add margarine. Place over medium heat until margarine melts.
2. Add onion, celery, and green pepper; saute' until tender. Stir in lima beans, tomato, and vegetable juice cocktail.
3. Bring to a boil; cover, reduce heat, and simmer 12 to 15 minutes or until beans are tender.
