Can also substitute apples or peaches with blueberries, strawberries, or orange sections.
2 oz cottage cheese 1 slice white bread (cut up) Water (or skim milk) to start blender 1/2 apple or peach cinnamon and sugar substitute
1. Heat 5 inch skillet.
2. Blend in blender cottage cheese, bread and water/milk.
3. Pour batter into HOT skillet, and cook until brown on bottom. Do not turn.
4. Slice fruit into very thin slices, and sprinkle generously over pancake.
5. Transfer skillet to broiler, and brown on top. Sprinkle with cinnamon and sugar substitute.
