Description: These low-carb cookies are sure to please your guests, especially when they find they aren't breaking any diet rules.

Chef's Comments:
This recipe taken from Prevention Low-Carb Holiday Recipes.
Ingredients:
2 cups almond flour
1/2 cup Splenda
1/2 cup butter, softened
1/2 teaspoons salt (if using salted butter, omit salt here)
1 teaspoon vanilla extract
1 teaspoon almond extract
Preparation:
1. Preheat oven to 325F. Coat baking sheet with cooking spray.

2. In large bowl, combine flour, Splenda, butter, salt (if using), and extracts. Form dough into walnut-sized balls and place on baking sheet 1" apart.

3. Bake 5 minutes. Press down lightly with with fork, then continue to bake 15 minutes. Let cool on baking sheet.

HINT: To make almond flour, grind almonds into a powder the consistency of all-purpose flour in your food processor.
