1 envelope brown gravy mix 1/2 cup of water 3 Tbs soy sauce 2 Tbs balsamic vinegar or red wine vinegar 1 garlic clove, minced 1 pork tenderloin (about 3/4 lb) cut into 1/2 inch slices 1/4 cup olive or vegetable oil 1/2 lb fresh mushrooms, sliced or 1 can sliced mushrooms 1 medium onion, sliced & separated into rings hot cooked rice
1. In a small bowl, combine the 1st five ingredients until blended; set aside.
2. In a large skillet combine fresh mushrooms, onions,and pork, in oil making sure to brown both sides of pork.
3. Stir in the gravy mixture, mushrooms (if from can) and bring to a boil.
4. Reduce heat; cover & simmer for 10 - 15 mins or until meat juices run clear & vegetables are tender.
Serve over rice.
