1 lb 2 oz. skinless, boneless chicken breasts 3 Tbsp tomato paste 2 Tbsp clear honey 2 Tbsp Worcestershire sauce 1 Tbsp chopped rosemary 2 cups cherry tomatoes sprigs of rosemary to garnish couscous or jasmine rice to serve
1. Cut chicken into 1 inch chunks or squares and place in a bowl.
2. Mix tomato paste, Worcestershire sauce and rosemary. Stir well and add to the chicken, coating well.
3. Alternating chicken and tomatoes, thread onto skewers. Spoon remaining glaze over skewers.
4. Cook under preheated broiler for 8-10 minutes, turning occasionally until chicken is thoroughly cooked. Serve on a bed of couscous or jasmine rice with rosemary sprigs for garnish.
