1 small ripe pineapple Juice of 1 lime or lemon 1 garlic clove, finely chopped 1 scallion, thinly sliced 1 green or red chile, finely chopped (both for risk-takers) 1/2 red bell pepper chopped 3 Tbsp chopped fresh mint 3 Tbsp chopped fresh cilantro pinch of salt pinch of sugar
1. Cut top and bottom of pineapple. Place upright on a cutting board and slice off the skin. Cut flesh into slices and half them. Remove the cores. Dice, reserving juices that accumulate with this process if possible.
2. Place the pinapple in a bowl and stir in the lime juice, garlic, scallion, chopped chile(s), and red bell pepper.
3. Stir in the mint and cilantro, salt and sugar. Stir well and chill until ready to serve.
