Description: A good rice recipe with a meaty twist

1 to 1 1/2 lbs ground beef
2 cups Uncle Ben's rice
2 bell peppers
1 onion
1 can stewed tomatoes
3 small cans tomato sauce + one can water
2 tablespoons chili powder
salt and pepper to taste
Cook rice while preparing sauce as directed below.


1. Brown meat in skillet and set aside.

2. Separately brown chopped onions and bell peppers in small amount of oil until soft.

3. Add stewed tomatoes, tomato sauce, water, chili powder, and salt and pepper. Let simmer for 15 to 20 minutes.

4. Pour and stir into rice, mixing well.
Chef's Comments:
This dish can be a side dish or a main dish. It's also a very good dish that can be prepared for a pot luck event (like they have at churches, etc.) This recipe can be increased or decreased by using smaller amounts of ingredients.
