Description: A wonderful meal for guests - boldly flavored filet mignon with delicate spinach and shiitake mushrooms

Ingredients:
4 – 8 ounce filet mignons
1/2 jar Secret Sauces Steak Marinade
6 cups fresh baby spinach
2 cups shiitake mushrooms
2 shallots
olive oil
kosher or sea salt
fresh ground pepper
Preparation:
1. Trim excess fat from filets. Place in bag with Secret Sauces Steak Marinade and marinate in refrigerator for 1-2 hours. (If you like a mellower flavor, add ¼ cup of dry red wine to the marinade 15 minutes before you are ready to grill.) Remove meat from bag. Discard used marinade.

2. Grill filets until desired doneness. Medium rare is our favorite.

3. Finely chop shallots. Slice shiitake into small pieces. Place 2 tablespoons of olive oil in pot and begin heating.

4. Add shallots and shiitake and cook on medium heat until shallots appear clear and shiitake begin to get soft. Add spinach and toss with olive oil, shiitake and shallots.

5. Decrease heat to low and cover pot with lid. Let spinach wilt until just done (do not over cook). Mix again and add salt and fresh ground pepper to taste.
