1 1/2 lbs. carrots sliced (4 1/2 cups) 1 cup mayonnaise or salad dressing 2 Tbs. chopped onion 2 Tbs. prepared horseradish 1/4 tsp. salt Dash pepper 1/4 cup crushed saltine crackers (about 7) 2 tsp. butter or margarine melted
1. In saucepan cook sliced carrots, covered with boiling salted water 10 minutes or until tender. Drain, place in a 1 qt. buttered casserole.
2. Combine mayonnaise, onion, horseradish, salt, and pepper. Spoon over casserole of carrots.
3. Mix crumbs and butter, sprinkle on top.
4. Bake uncovered in a 350-degree oven for 30 minutes or until heated through.
