1/2 cup walnut pieces 1/3 cup brown sugar 6 firm bananas 4 tablespoon butter 9 ounce vanilla ice cream
1. Chop the walnut pieces finely and put in a small non-stick pan with the sugar. Heat gently, stirring continuously until the sugar has melted and acquired a syrupy consistency.
2. Line a large baking pan with waxed (greaseproof)paper and pour the hot syrup over it. Leave the syrup to cool down. As soon as it has set, break it into pieces with a knife.
3. Peel the bananas and cut them in half lengthways. Cover the bottom of a large aluminum foil tray with flakes of butter. Arrange the bananas halves in it and sprinkle with the crushed walnut toffee. Carefully cover with foil and grill over medium heat for about 8-10 minutes. Arrange the hot toffee bananas on plates with a scoop of vanilla ice-cream on each one.
