2 cups cooked and cubed chicken (white meat recommended) 1/4 cup white raisins (opt.) 2 apples, peeled and diced 3 tablespoons chopped chutney 1 cup pineapple chunks 2 teaspoons curry powder 1/3 cup chopped almonds 3/4 cup mayonnaise 1/2 cup shredded coconut avocado slices (opt.)
1. In a bowl, combine chutney, curry, and mayonnaise.
2. Combine all other ingredients in a separate bowl.
3. Stir curry, chutney, and mayonnaise mixture into the chicken mixture.
4. Serve on watercress or lettuce leaves, with slices of avocado.
