1/3 cup Olive Oil 3 Tbs. Dijon Mustard 1 tsp. Chopped thyme 1 tsp. Salt 1/4 tsp. Black Pepper 2 cups Sliced cucumber 1 cup Sliced radishes 1 Green Pepper, cored and sliced 2 Scallions, sliced 2 cups Romaine Lettuce
1. Combine olive oil, mustard, thyme, salt and pepper.
2. Add cucumber, radishes, green pepper and scallions.
3. Toss with lettuce.
