6 large green bell peppers 1 pound ground pork 1 teaspoon tomato sauce 1 egg,lightly beaten 6 teaspoons tomato juice 1/2 cup raw rice 1 tablespoon paprika 1 small onion, chopped 6 bacon strips, cooked and crumbled salt and pepper to taste sugar to taste
1. Place meat in a bowl; add rice, salt, pepper, bacon bits, onion and paprika.
2. Add egg and mix thoroughly.
3. Cut stem end off green peppers; remove seeds and ribs.
4. Soften peppers for a minute or two in boiling water, then fill with the meat mixture.
5. Place peppers upright in a deep saucepan. Combine remaining ingredients and pour over peppers (the liquid should come to about 2 inches from the top of the peppers.) Add more tomato juice if required.
6. Cover and cook slowly for 1-1/2 to 2 hours. Add more sugar or a touch of lemon juice to adjust flavor.
