salt ground ginger to taste pepper to taste, freshly ground 2 tablespoons rice wine or sherry 4 filet mignon steaks, about 6 oz each 1 1/2 tablespoons butter 1 11-oz can Mandarin oranges 1 tablespoon capers 1 tablespoon butter, cut into small pieces
1. Combine salt, ginger, pepper, and wine; blend well. Rub onto steaks.
2. Heat 1 1/2 tablespoons butter in heavy skillet.
3. Add steaks; saute' 2 minutes on each side. Arrange oranges and capers on top of steaks; dot with remaining butter.
4. Place skillet under preheated broiler; broil 3 minutes.
5. Serve steaks immediately on preheated plates.
