2 cups plain flour 1 cup oats, uncooked 1 teaspoon baking soda 3/8 teaspoon salt 1 teaspoon ground cinnamon 1 cup margarine, softened 1 cup firmly packed brown sugar 1 cup granulated sugar 1 egg, slightly beaten 1 teaspoon vanilla flavoring 1 cup Libby's solid pack pumpkin 1 cup semisweet chocolate morsels or raisins (optional) assorted icing, peanut butter, candies, raisins, nuts
1. Combine flour, oats, baking soda, salt, and cinnamon.
2. Cream margarine and gradually add sugars, beating until light and fluffy.
3. Add egg and vanilla flavoring, mixing well.
4. Beginning and ending with flour, alternately add flour and pumpkin, mixing well after each addition.
5. Stir in semisweet chocolate morsels or raisins, if desired.
6. Drop 2 tablespoons of dough per cookie onto lightly greased cookie sheet. Use a metal spatula to spread into pumpkin shape. Add a small amount of dough to shape a stem.
7. Bake at 350 degrees for 20-25 minutes, until lightly browned and firm.
8. Remove from cookie sheet and cool.
9. Decorate as desired with assorted ingredients listed above.
