1 egg 1 cup milk 1 tablespoon sugar 1 tablespoon tapioca 1/8 teaspoon salt 1/2 teaspoon vanilla 2 tabelspoons sugar
1. Separate the egg, mix egg yolk, milk, sugar, tapioca, salt in sauce pan.
2. Cook over medium heat, stirring constantly until mixture boils for 3 min.
3. Cool, stir in vanilla. Beat egg white until foamy, beating constantly.
4. Add remaining sugar a little at a time.
5. Beat egg white until stiff, fold beaten egg white into pudding.
6. Chill and serve.
