Sweet Potato Souffle Recipes

3 cups cooked, mashed sweet potatoes
1/2 to 3/4 cup sugar(depending on sweetness of potatoes)
1/2 teaspoon salt
2 eggs, lightly beaten
1/3 stick margarine, melted
1/3 to 1/2 cup milk, depending on consistency desired
1 teaspoon vanilla

1. Mix together all ingredients.

2. Pour into greased baking dish.

3. Bake at 350 degrees for 30-35 minutes. About 10 minutes before taking out, cover top with miniature marshmallows and continue cooking until marshmallows have browned.
