1 1/2 cups sifted cake flour 2 teaspoons baking powder 1/2 cup shortening 2 eggs, well beaten 2 cups hot mashed sweet potatoes 3/4 cups sugar 1/4 teaspoon salt 1 teaspoon nutmeg 1/2 cup milk juice from 1/2 lemon
1. Sift flour and baking powder together.
2. Add shortening and beaten eggs to potatoes while still hot; add sugar, salt and nutmeg. Beat thoroughly.
3. Add flour and milk alternately in small amounts, beating well after each addition.
4. Add lemon juice.
5. Pour into greased loaf pan and bake in a 325 degree oven for 1 hour. Makes 1 8x4-inch cake.
