1 Tbs. extra virgin olive oil 1 medium red onion, peeled and chopped 3 cups frozen whole kernel corn, thawed 2 (10-oz.) pkgs. frozen baby lima beans Salt and pepper, to taste 1/2 cup snipped fresh parsley
1. Heat the oil in a saucepan, add the onion, and saute' until translucent. Add the corn, adjust the heat to a low simmer, cover tightly, and cook, stirring occasionally, for about 10 to 15 minutes, or until the corn is heated through.
2. Add the lima beans, salt and pepper to taste, and parsley, and cook, stirring, for about 3 to 4 minutes.
3. Remove from the heat and serve immediately.
