8 ripe beef tomatoes 18-oz/500g spinach 1 white onion 1 Tbs. butter 3 Tbs olive oil Salt Black pepper 9-oz/250g diced bacon or ham 3 Tbs. breadcrumbs 3 Tbs. grated Parmesan cheese
1. Wash the tomatoes, cut off the tops and scoop out the flesh. Cut the flesh and the top into cubes.
2. Carefully wash the spinach several times. Peel the onion, cut into cubes and saute' gently in a saucepan in some olive oil. Add the spinach and cook gently for about 5 minutes. Season with salt and pepper.
3. Saute' the diced bacon or ham in a skillet (frying pan) with 1 tablespoon oil until crisp.
4. Mix together the diced tomatoes, spinach, onion and bacon. Add the breadcrumbs and Parmesan cheese.
5. Spoon this mixture into the hollowed-out tomatoes.
6. Wrap the stuffed tomatoes in foil and grill about 10-15 minutes.
