crust: 1 1/2 cupS graham cracker crumbs 2 Tbs sugar 3 Tbs butter or margarine, melted Filling: 19 oz cream cheese, softened 1 cup sugar 2 tsp lemon peel, grated 1/4 tsp vanilla 3 eggs Glaze: 1 cup mashed strawberries 1 cup sugar 3 Tbs cornstarch 1/3 cup water
Preheat oven to 350 F.
CRUST:
1. Stir together graham cracker crumbs and sugar.
2. Mix in butter thoroughly and press into a 9" springform pan.
3. Bake 10 minutes. Cool.
4. Reduce oven temperature to 300 F.
FILLING:
1. Beat cream cheese in a large mixing bowl.
2. Gradually add sugar, beating until fluffy.
3. Add lemon peel and vanilla.
4. Beat in eggs one at a time.
5. Pour into shell.
6. Bake 1 hour or until center is firm.
7. Cool to room temperature and then spread with the strawberry glaze. Chill 3 hours.
GLAZE:
1. Blend sugar and cornstarch together in a small saucepan.
2. Stir in water and strawberries.
3. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir for 1 minute.
4. Cool thoroughly before spreading over cheesecake.
