6 cups yellow crookneck squash 1 stick margarine, melted 1 tablespoon flour 4 eggs, separated 2 cups sugar 1 tablespoon lemon flavoring 3 unbaked pie crusts
1. Boil squash in salted water until tender;
drain well.
2. Add margarine, flour, egg yolks, sugar, and
lemon flavoring.
3. Pour into blender or food processor and mix
well.
4. Beat egg whites and fold in.
5. Pour into unbaked pie crusts and bake at 350
degrees until light brown on top.
