Description: This is a new appetizer, to try at your next party.

Ingredients:
1/2 cup vegetable oil
2 large onions, chopped
2 10 ounce pkgs. frozen chopped spinach, thawed, drained, and squeezed
2 tablespoon snipped fresh dill
2 tablespoon flour
8 ounce feta cheese, crumbled
4 eggs, lightly beaten
salt and pepper, to taste
2 pkgs. frozen puff pastry, thawed
2 egg yolks, beaten with 2 tsps. water
Preparation:
1. Preheat oven to 375-degrees.

2. Place oil in a large saucepan over medium heat, add the onions and saute' until soft. Stir in the spinach, dill, and flour and cook for about 10 minutes, or until most of the moisture has evaporated. Remove from the heat and mix in the cheese, eggs, salt, and pepper.

3. Cut the pastry into twenty-four 3-inch squares and place a heaping tablespoon of the spinach-feta mixture in the center of each. Moisten edges of the pastry with water and fold to create triangles, then press the edges together firmly with a fork to seal. Lightly brush the pastries with the egg wash.

4. Place in the oven and bake for about 20 minutes, or until golden brown.
