1 package chopped spinach (fresh or frozen) 2 small packages lemon Jello 1 cup boiling water 2 cups cottage cheese 1/2 cup mayonnaise 1/2 cup chopped celery 1/4 cup chopped onion
1. Mix together cottage cheese, mayonnaise, celery and onions.
2. Place spinach in boiling water.
3. Add Jello and cook together until done.
4. Stir Jello and spinach mixture into cottage cheese mixture.
5. Place in a 2 1/2 cup mold that has been lightly sprayed with Pam. Refrigerate until ready to serve.
NOTE: This will keep several days in refrigerator and can be frozen.
