Description: This dip is a big hit with guests. It can be served with tortilla chips, crackers or vegetables if you're carb conscious.

Ingredients:
1 can (13 1/2 oz) artichoke hearts packed in water, drained and chopped
1 package (10 oz) frozen chopped spinach, thawed and drained
2 cups reduced-fat mayonnaise
2 cups grated Parmesan cheese
2 cloves garlic, crushed sprinkle of paprika
Preparation:
1. Preheat oven to 325F.

2. Combine artichoke hearts, spinach, mayonnaise, cheese, and garlic in large baking dish. Sprinkle with paprika.

3. Bake 50-60 minutes.

4. Serve with bell pepper strips, cucumber and celery sticks, or whole-wheat crackers or chips.
Chef's Comments:
Tip: To thaw frozen spinach, place spinach in a bowl in the refrigerator overnight or at room temperature for 2 hours.
