1/2 cup, plus 2 Tbs. packed brown sugar, divided 2 tsp. ground cummin 1 tsp. each coarse Salt, garlic powder and Chipotle chili powder 3 lbs. thin-cut beef brisket 1/2 cup minced onion 1 Tbs. Butter 1/2 cup Whole-grain mustard 1/4 cup Brewed coffee 2 Tbs Apple cider vinegar 1 Tbs. chopped fresh Thyme
1. Heat oven to 250F.
2. Combine 2 Tbs. sugar and next 4 ingredients; rub over meat.
3. Cook brisket, fat side in butter 5 min.
4. Stir in remaining ingredients; cook 5 min.
5. Cook brisket 1 more hour, or until thermometer reds 170F, brushing with sause every 20-30 minutes. Cover; let sit 15-20 minutes.
