3 slices bacon 1 cup diced celery 1 cup snow peas 1/4 cup sliced red bell pepper 1/4 cup sliced green bell pepper 1/4 cup sliced yellow bell pepper 1 pound shrimp, deveined and peeled 1 tablespoon soy sauce 2 cups cooked rice salt and pepper to taste
1. Fry bacon until crisp, then remove from skillet.
2. Add celery, snow peas, and peppers to bacon drippings. Cook, stirring for one minute.
3. Add shrimp and soy sauce. Cook for two minutes, or until shrimp turns pink.
4. Add rice. Season to taste with salt and pepper. Stir to mix.
5. Serve hot. Garnish with bacon crumbles, if desired.
