2 lbs. raw and unpeeled large fresh shrimp Vegetable cooking spray 2 tsp. olive oil 8 cloves garlic, coarsely chopped 1 tsp. seeded, minced red chile pepper 1 Tbs. lime juice
1. Peel and devein shrimp.
2. Coat a large nonstick skillet with cooking spray; add oil and garlic.
3. Place over medium-high heat 1 minute.
4. Add shrimp and pepper; cook 4 minutes, stirring constantly.
5. Add lime juice, and cook an additional 3 minutes or until shrimp turn pink.
