Cookies: 1 cup butter, softened 1 1/2 cups confectioners' sugar 1 egg 2 teaspoons pure vanilla extract 2 1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon cream of tartar 1/4 teaspoon ground nutmeg Green Icing: 13 drops green food color 2-3 teaspoons milk 1/2 cup confectioners' sugar
1. Preheat oven to 375°F. Cream butter and sugar until light and fluffy. Add egg and vanilla and mix well. Combine remaining cookie ingredients and slowly add to butter mixture.
2. Chill dough. Roll to 1/8-inch thickness on lightly floured surface and cut dough with shamrock cookie cutter. Bake on greased baking sheet 8-10 minutes or until light brown. Cool cookies completely on wire racks before decorating with green icing.
3. Icing: Mix 13 drops of green food color with milk. Combine with confectioners' sugar, stirring until color is evenly distributed and icing is smooth. You may sprinkle cookies with green sugar.
