1/2 cup water 1 package unflavored gelatin 1 cup sugar 4 eggs, separated 1/4 cup lime juice several drops of green food coloring 1/4 teaspoon cream of tartar 1 baked 9-inch pie shell 2 tablespoons green decorating sugar
1. Combine water, gelatin, 1/2 cup sugar, egg yolks, lime
juice, and food coloring in saucepan; bring to rolling
boil, stirring constantly.
2. Remove from heat; place saucepan in pan of ice water.
Cool until thickened.
3. Beat egg whites until frothy. Add cream of tartar and
remaining sugar gradually; beat eggs until stiff. Fold
in gelatin mixture; pour into pie shell.
4. Sprinkle decorating sugar on top; refrigerate for at
least 1 hour.
