1 cup regular margarine 3 cups unbleached flour 1/2 cup shortening 3 cups sugar 2 tablespoons lemon extract 5 large eggs 1 cup 7-Up (room temperature)
1. Cream the margarine, shortening and sugar together, beating until light and fluffy.
2. Add the eggs, one at a time, blending well after each addition.
3. Beat in the flour, then the lemon extract and 7-Up. Blend well.
4. Pour the batter into a well-greased and floured tube pan; bake at 325 degrees F for 1 to 1 1/2 hours.
