4 boneless, skinless chicken breasts 1 stick margarine, divided salt and pepper to taste Mozzarella cheese, sliced and brought to room temperature 1 egg, lightly beaten 3/4 cup milk 1 cup fine dry bread crumbs 1/2 cup dry white wine 1 tablespoon parsley 1/4 teaspoon sage 1/4 teaspoon rosemary 1/4 teaspoon thyme
1. Melt 1/2 stick margarine. Coat chicken pieces with melted margarine; salt and pepper each piece.
2. Wrap chicken pieces with slices of cheese; secure with toothpicks.
3. Mix egg and milk.
4. Dip chicken in egg and milk mixture and coat with bread crumbs; repeat to coat well. Place in baking dish.
5. Cover and bake at 350 degrees F for 30 minutes.
6. Meanwhile, melt remaining 1/2 stick margarine. Mix in wine, parsley, sage, rosemary, and thyme.
7. Remove chicken from oven. Baste with herb mix; return to oven and cook an additional 30 minutes.
