2 tsp. salt 1 tsp. pepper 1 tsp. paprika 1/4 tsp garlic salt 1 tsp. rosemary leaves 1 Tbs. steak sauce 1 12-lb. fresh leg of pork, boned 1/3 cup chopped parsley 1/3 cup chopped black olives 1/3 cup chopped green onions 3 canned pimentos, chopped
1. Combine salt, pepper, paprika, garlic salt, rosemary leaves and steak sauce; rub half the mixture on inside of pork.
2. Combine remaining ingredients; stuff inside of pork with pimento mixture. Tie securely. Score fat and skin; rub remaining salt mixture on outside of pork.
3. Place roast, fat side up, on rack in shallow baking pan.
4. Roast in preheated 325-degree oven for 4 hours and 30 minutes or to 185 degrees on meat thermometer.
