1/4 cup butter or margarine
4 cups sliced fresh zucchini
1/4 cup chopped yellow onion
1 1/2 cups halved cherry tomatoes
3 Tbs. tomato juice
Pinch crushed dried oregano
Pinch crushed dried thyme
Pinch crushed dried basil
Salt and pepper, to taste
1. Melt the butter in a skillet over medium heat, and add the zucchini and onion and cook, stirring, until the zucchini is tender but still crisp.
2. Add the tomatoes, tomato juice, oregano, thyme, and basil and heat through.
3. Add salt and pepper to taste.
