1 16-oz can salmon, drained with bones removed 1/4 cup saltine cracker crumbs 1 small onion, chopped 2 eggs, lightly beaten Cornmeal or flour
1. Mix salmon, cracker crumbs, onion, and eggs.
2. Form into patties.
3. Coat with cornmeal or flour.
4. Heat skillet to medium heat; add just enough oil to coat bottom.
5. Brown patties on both sides.
