1 cup white rice 1 to 2 tablespoons margarine 2 1/2 cups chicken broth or stock 1/2 teaspoon salt Pepper to taste
1. Place all ingredients in pot. Bring to boil on stovetop.
2. Adjust heat setting to medium, and place lid on pot. (If pot starts to boil over, lift lid for a second and replace. As soon as heat is well adjusted, this will stop.)
3. When water has nearly boiled out and you see large bubbles forming on top, adjust heat to low. Continue to cook until you no longer see rice bubbling.
4. Stir rice only once and taste for doneness. Add more stock if needed to cook until done.
NOTE: The secret to good rice, no matter what recipe is used, is to avoid stirring it. The more often rice is stirred, the stickier and gummier it becomes.
